STANDARDS

✅ Sweep all the floors with a dry broom before you mop

Don’t use dirty water. Dump and refill frequently


STEPS

  1. Fill the clean yellow COMMERCIAL MOP & WRINGER BUCKET with 4 gallons (about ½ full) with warm water.
  2. Start with the Front of House Floors. For the front of house floors, squeeze in one generous squirt of dish soap. Rinse out Use the FOH labelled mop in the mop sink.
  3. Roll the mop bucket close to the furthest bathroom.
  4. Submerge the mop into the water.
  5. Wring the mop out in the wringer by twisting the mop into the wringer first then squezzeing it out using the handle.
  6. Mop out around the edge of the area you’re mopping first. Then use ‘figure 8’ patterns to clean the area. Mop the following sections in this order, rinsing and wring out the mop between:
    1. Blue washroom
    2. Pink washroom
    3. Washroom hallway
    4. Under booths
    5. Booth passageway
    6. Entrance area- to the kitchen door.
  7. At this halfway point of the Front of House Floor, dump out the water and fill it again with water and soap.
  8. Continue mopping
    1. Around the stools
    2. Behind the lunch counter
    3. Under where the tables go (they should be pushed out in the middle of the table passage area)
  9. Push the tables back
  10. Mop the table passage area
  11. Dump out the water in the mop sink. For the back of house floors, squeeze in two generous squirts of dish soap. You should see bubbles.
  12. Rinse out Use the BACK OF HOUSE labelled mop in the mop sink.
  13. Roll the mop bucket to the farthest end of the kitchen. Using ‘figure 8’ patterns mop the entire kitchen floor ending at the mop sink.
