Steps to take when a guest tells you they have an allergy.

Explain our policy.

We take allergies seriously and we will do our best to accommodate reasonable modifications but can not make a guarantee of cross-contamination in our kitchen.

Check the ingredients binder

Ask as many clarifying questions as you can think of.

Take the order

Suggest simpler options like single- ingredient items like eggs, meats, fruits, greens or smoothies.

Include all special instructions from guest

Speak to the kitchen

Walk directly into the kitchen and speak to the manager on duty. Go over the list of allergens.  Ask the kitchen what steps they will take.  Sometimes the manager may want to speak directly to the guest.

Double-check

When the order comes up at the pass, pay extra attention to it.  Double-check with the kitchen that the necessary precautions were taken by asking the cooks how the food was handled.

When you serve the order, reinstate the precaution the kitchen took to avoid cross-contamination

Follow-up again

Check-in to ask if the meal was as expected and if they are enjoying the meal. Thank them for their understanding of our limited capabilities.
