✔ Serve food from the right side of the guest, when possible.
✔ Make sure all food has the appropriate accompaniments with it at the time it is served. (napkins, spoons, sides etc.)
✔ Before taking a plate from the pass wipe any spills with a microfiber cloth marked with a rubber band in a white vinegar to wipe it before leaving the pass
✔ Hot food hot
✔ Cold food cold
✔ Serve drinks as soon as all the drinks are completed for the entire table
✗ Never put a loose cutlery item straight on the table, put it on a use a plate or a napkin under it
✗ Never put your hands or finger anywhere near the rim of a glass or dish. (spider fingers)
✗ Never touch the food. If food needs an adjustment hand it back to the cooks and ask them do the adjustment.
