HOW TO SWEEP AT CLOSE
WHY To keep our promise to provide an exceptionally clean environment
STANDARDS
✔ Sweep after the last guest leaves
STEPS
- Use the FOH labeled STANDARD BROOM to collect and dirt and debris from the SMALL AREAS:
- both bathrooms
- under the booths
- around the stools
- All corners and edges
- As you collect the dirt, use the LOBBY BROOM & DUSTPAN to dispose of the dirt into a garbage can.
- Use the FOH labeled PUSH BROOM to collect dirt and debris from the LARGE AREAS:
- bathroom hallway
- booth passage area
- entrance to kitchen passage (sweep entrance carpet, roll it up and sweep under it)
- table passage area
- behind lunch counter
- PULL TABLES OUT into table passage area
- Use the pushbroom to to collect dirt and debris from UNDER TABLES.
AVOID
✗ Leaving piles of dirt and debris for more than 30 seconds
✗ Using lobby broom- it is only for occasional pick-ups during service
