HOW TO SWEEP AT CLOSE



WHY To keep our promise to provide an exceptionally clean environment


STANDARDS

✔ Sweep after the last guest leaves


STEPS

  1. Use the FOH labeled STANDARD BROOM to collect and dirt and debris from the SMALL AREAS:
    1. both bathrooms
    2. under the booths
    3. around the stools
    4. All corners and edges
  2. As you collect the dirt, use the LOBBY BROOM & DUSTPAN to dispose of the dirt into a garbage can.
  3. Use the FOH labeled PUSH BROOM to collect dirt and debris from the LARGE AREAS:
    1. bathroom hallway
    2. booth passage area
    3. entrance to kitchen passage (sweep entrance carpet, roll it up and sweep under it)
    4. table passage area
    5. behind lunch counter
  4. PULL TABLES OUT into table passage area
  5. Use the pushbroom to to collect dirt and debris from UNDER TABLES.

AVOID

✗ Leaving piles of dirt and debris for more than 30 seconds

Using lobby broom- it is only for occasional pick-ups during service
